Instructions

- Cook the Crepes: Heat a lightly oiled non-stick frying pan over medium heat. Pour about 1/4 cup of batter onto the pan, swirling it around to form a thin circle. Cook for 2 minutes or until the bottom is light brown. Flip and cook the other side for an additional minute. Repeat with remaining batter.
- Prepare the Berry Filling: In a bowl, combine the berries with sugar if desired. Let them sit for a few minutes to macerate.
- Assemble the Crepes: Place each crepe on a plate, spoon some berry filling onto one half, and fold the crepe over. Sprinkle with powdered sugar and garnish with mint leaves if using.
